British expat restaurateur Simon Lowe, whose resume boasts running London's elite members-only Morton’s bar and several quaint English countryside inns, brought his expertise and stylings to Scott's. Hybridizing a traditional English pub with brighter and homier aesthetics and materials resulted in this upscale bar, restaurant, and club. The existing architecture of the space, coupled with the desired program, essentially split the design into thirds: the 45-seat bar area, 70-seat dining room, and the 35-seat private, members-only Cask Club affiliated with the Scotch Malt Whisky Society.
